It’s Secret Recipe Club time again! This month I was assigned to Chris and Amy’s fantastic blog, A Couple in the Kitchen. Their motto is: The couple that sautes together, stays together – and I couldn’t agree more! I keep trying to get Shaun in the kitchen cooking with me more and he is really warming up to the idea (no pun intended). It’s fun to spend time together creating a beautiful meal that you can enjoy together. I grew up spending a lot of time in the kitchen and eating dinner at home almost every day of the week, so keeping tradition is very important. Chris and Amy have been blogging since 2008 so clearly it is a motto to live by!
As you’ll notice this is a fairly straight-forward recipe to make. You can really play around with the different ingredients to your liking. I opted to leave out the half and half that they used in their recipe because of my infamous “wedding diet” but I’m sure these would be decadently delicious with it. I made a delightful Valentine’s Day meal at home last week and included these babies as a side dish. They complemented the lamb chops beautifully.
Cheesy Pancetta Hash Brown Bites (adapted from A Couple in the Kitchen)
Ingredients:
- 1 package Simply Potatoes Shredded Hash Browns OR 20 ounces of defrosted Frozen Hash Brown Potatoes (squeezed of excess water)
- 2 or 4 ounces diced pancetta
- 4 or 8 ounces of Shredded Cheese (Your favorite kind!)
- Salt and freshly ground black pepper
- Drizzle of olive oil
Directions:
Preheat oven to 400 degrees. In a large bowl, mix together the potatoes, pancetta and cheese. Fill the cups of a 12-cup muffin tin with this mixture. Place a pinch of both salt and pepper into each cup and then drizzle lightly with olive oil. Cover loosely with aluminum foil and bake at 400 for 15 minutes. Remove the foil and bake for an additional 15-20 minutes, or until nicely browned. Allow to cool for five minutes before removing from pan. Serve hot.
