It’s time for my Secret Recipe Club reveal! Kim from Liv Life is such an amazing mom and wife. She dedicates her blog to her daughter Liv (hence the name). Her recipes are so similar to my cooking style – they encompass a little bit of everything. I’ve been so lucky with the random assignment of Secret Recipe Club blogs the last few months… I have had SO MANY recipes to choose from. I can’t wait to make Kim’s Apple Cinnamon Crepes, Savory Peach Chicken, Grand Marnier Brownie Bites, and Grilled Buffalo Chicken Pizza in hopefully the near future!

I finally decided on this salad because I’ve recently started working out and am trying to eat healthier when I can. You better believe my co-workers were jealous when they saw me pull this out for lunch! I hate salads that are made up of all lettuce; where is all the fun stuff?? This one has creamy avocado, bitter arugula, crunchy veggies and tangy feta cheese – all dressed in a lemony vinaigrette. This might be my new favorite summer salad!

Greek Couscous Salad (adapted from Liv Life)

Ingredients:

  • 1 cup water
  • 1 cup dry couscous
  • 1 1/2 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dried oregano
  • 2 tomatoes, chopped
  • 1/2 cucumber, chopped
  • 1-2 slices of red onion, chopped
  • Handful of arugula
  • 1/2  avocado, diced
  • 2 ounces crumbled feta cheese
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Bring water to a boil in a small saucepan.  Add the couscous, stir, cover and turn off the heat.  According to the package, after about 5 minutes the couscous will be ready to be fluffed.
  2. While couscous is cooking, whisk the olive oil, red wine vinegar, lemon and oregano together in a small bowl. Set aside.
  3. Add the chopped tomatoes, cucumber and red onion to a medium bowl.  Gently stir in the dressing.  Add a portion of the couscous depending on if you prefer your salad to be more veggies or more pasta. At this time you can make as little or as much as you want of this salad. Just be sure to double the vinaigrette recipe accordingly.
  4. Place a handful of arugula on a plate.  Drizzle with a little olive oil if you like, toss and sprinkle with salt and pepper.  Scoop the couscous salad on top of the arugula and top with avocado and feta.  Sprinkle with more salt and pepper if desired.
