How many times have I told you I love the combination of chocolate and mint?
They are a match made in heaven.
These bars are named after a classic cocktail called a Grasshopper. Its ingredients are creme de menthe, fresh cream and creme de cacao. The cream de menthe is what yields the minty flavor. I have yet to try one of these fancy cocktails but it is now on my bucket list after eating these. Like most of Matt and Renato’s recipes in this book, they require multiple steps. In my head, the more work, the better they should taste and these sure delivered!
These bars are unlike any I’ve had before. Their base is a chocolatey brownie, topped with a mint buttercream and then covered in a layer of chocolate ganache. The brownie recipe is definitely a keeper. They were so moist and chewy. The buttercream did not come together using the traditional method though. I’ve never used flour in my buttercream before, but hey, it worked. The mint flavor came through just enough and it was not overwhelmed by the two chocolate layers. I honestly can’t decide which layer was my favorite! Chocolate ganache will always have a special place in my heart and brownies are a tried and true favorite of mine. That mint buttercream though… it was so light and airy. I must have liked spoonful after spoonful. I’m actually surprised I had enough left to make a full layer!

Chocolate and mint is pretty awesome. Your bars look perfect with that pale shade of minty green. The frosting method is odd, but you are right, it totally works! This was my favorite part. Mmmm….frosting.
