 ABC‘s March recipe was Emergency Blender Cupcakes created by Abby Dodge. You can find the recipe in her cookbook, The Weekend Baker. I have to admit – I have made these cupcakes three times already. They are just that good and that easy to prepare! I love when cupcake recipes come together in no-time at all. I’m gonna go out on a limb and say that you probably have all of the ingredients necessary to make these cupcakes today. This is what you need:

• Flour
• Cocoa Powder
• Sugar
• Baking Soda
• Salt
• Hot Water
• Oil
• 1 egg
• Vanilla

Am I right? Okay, stop reading this post and make these now then. Don’t feel like getting off the couch just yet? That’s fine. I actually made this in “cake” form once as well… the bake time is not the same but it is just as delicious.

The fudge frosting on these is TO-DIE-FOR. It literally tastes as rich as fudge but in spreadable fashion. It tastes so much like fudge that I may or may not have snuck a few spoonfuls when passing by the fridge this week. Put that frosting on top of these moist, spongy cupcakes and you’ll feel like you’ve died and gone to chocolate heaven.
