These little guys were SO yummy! The ingredient list mimics what I use in my Big Soft Ginger Cookies, except there is no molasses in these. They get their color from the dark brown sugar and warm spices such as cinnamon, cloves, nutmeg and ginger. The other secret ingredient in these is orange zest. There is only a subtle background note of the orange zest but enough to make you think, “Hmm what is that?” I ate about 4 in a row when these cookies came out of the oven. I had to taste-test right?
I definitely give a thumbs-up to this recipe but these cookies weren’t as easy to make as the recipe seemed. The dough comes together with ease and I thought it would be smooth sailing until I started to roll them out. It was very sticky and I had to roll it over and over again to get it the correct consistency so that it did not stick to the board. I lost a few in the process but still ended up with 24 cookies. Who knows whether they were the perfect thickness or not; I liked them. Do you know what I liked even more than how cute these were? I loved the course sugar sprinkled over top before they baked. It added just the right amount of sweetness to complement the spices in the cookies. Overall a big win in my book.

Cute! I was surprised at how dark they came out when there is no extra molasses in the cookies – just the molasses from the dark brown sugar gave them the color. I also really liked the sparkle and crunch that the coarse sugar gave them.
The best way to solve the dough problem is to roll it between two sheets of parchment or wax paper. You will NEVER lose dough that way. BEST WAY TO DO IT.
