This week I baked alongside the ABC bakers from a new book, The Weekend Baker by Abby Dodge. Abby actually chose this recipe herself for us to make! She is an amazing baker and someone whom I admire very much. I hope we made her proud with this rendition!

The recipe is pretty straight-forward and easy to mix together. It makes sense because Abby says her book contains “irresistible recipes, simple techniques and stress-free strategies for busy people.” I like the sounds of that, almost as much as I like the combination of bananas and chocolate in this cake. It’s a wonderful treat for breakfast. The density of this cake reminds me of a riff on pound cake, but in a bundt pan.

I actually had to make this cake twice (such a tragedy I know…) because the first one completely stuck to the pan. When I went to turn the cake out onto the plate, half of it was left in my pan. It SUCKS when that happens. I had to give this one another try so the next time I buttered and floured the pan REALLY well. It worked! No sticking at all… I barely even had to use a knife to loosen the cake around the edges.

    Your cake turned out great!! I too omitted the nuts and that worked just fine. Interesting that you had a problem unmolding the cake like I did. This hasn’t happened to me in a long time. Must be a very sticky batter, I guess :o )

    I’m new to ABC too! Your cake turned out well! I have the same experience with other bundt cakes, half in the pan and half on the plate! So I bought myself a good bundt pan, which is a little expensive, but so worth it, and greasing it really well helps! Looking forward to next month’s bake! Happy New Year!!
