The recipe given to us included nuts but since I am allergic, I found a different recipe that omitted nuts and had white chocolate instead! I found it in my cookbook, 1 Mix, 100 Muffins by Susanna Tee. It is an amazingly easy collection of recipes for muffins, muffins and more muffins. These particular ones turned out very moist and full of chocolatey goodness. I ate one warm, right out of the oven and loved how the marshmallow and bits of white chocolate melted in my mouth. Look at the marshmallow oozing out of these babies while they baked!
- Heaping 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa
- 1 tbsp baking powder
- 1/8 tsp salt
- Heaping 1/2 cup superfine sugar
- Heaping 1/2 cup white chocolate chips
- 1/2 cup mini marshmallows
- 2 large eggs
- 1 cup milk
- 6 tbsp melted, cooled butter
Directions:
- Preheat the oven to 400 degrees F. Line a muffin tin with 12-16 liners. Sift together the flour, cocoa, baking powder and salt into a large bowl. Stir in the sugar, chocolate chips and marshmallows.
- Lightly beat the eggs in another bowl, then beat in the milk and butter. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until combined; do not overmix.
- Spoon the batter into the prepared muffin pan. Bake in the preheated oven for about 18-20 minutes, until risen and firm to the touch.
- Let the muffins cool in the pan for 5 minutes, then serve warm or transfer to a wire rack and let cool completely. Makes 12-16 muffins.
These muffins reminded me of the Rocky Road my family makes at Christmas each year. If a breakfast treat brings back great memories, they are a hit in my book! I will surely be making these again… next time I make a trip back to Long Island. Love you guys!
