The blog I was assigned this month for Secret Recipe Club was 365 Days of Baking. I don’t know her name but I love her ambition! She started her blog as a challenge to herself to bake something every day for 365 days. Believe it or not, she is about 2/3 of the way through! I am a lot like her in that I love and cherish my family and friends very much. In almost every post she writes about their reactions to her food. I love it!
When perusing through her blog for a recipe to make this month, I had to search for something savory. That is because I’ve been doing a lot of baking lately. Arguably, some would say that I am running a bakery out of my own house. I stumbled upon her Chicken Nachos and knew that after a week of traveling, this would be the perfect “dinner” to eat on the couch while catching up on DVR’d shows. So I did just that.
I love the idea of these nachos but would have liked more sauce. Next time I make these I will add more BBQ sauce and less tortilla chips. The sauce had a tang to it – it was a little sweet and a little spicy, just like it’s name implies. There was just not enough sauce to coat the bottom half of the tortilla chips though. Easy fix. This is a great option for a football game as well – it’s great munchie food!
Ingredients:
- 1 1/2 cups shredded rotisserie chicken
- 1/2 cup Frank’s Red Hot Wings Sweet Heat BBQ Sauce
- 1 (13 oz) bag restaurant style tortilla chips
- 1/2 cup cherry tomatoes, halved
- 2 cups shredded Mexican Style cheese
- 1/3 cup green onions, chopped
Directions:
- Preheat oven to 400ºF. Cover a baking sheet with foil and spray with nonstick cooking spray. Shred the rotisserie chicken with two forks (or your hands) and put into a medium bowl. Add BBQ sauce and coat chicken completely.
- Place tortilla chips evenly on baking sheet. Spread chicken over tortilla chips. Place cherry tomatoes on top of chicken. Distribute cheese evenly over top. Scatter green onions over cheese. Bake for 8-10 minutes or until cheese is melted.

nachos are always better with chicken

Why is it that nachos always taste better on the couch in front of the tv? Was the Franks sauce hot? Because I bought the wing sauce and it was on FIRE hot. Even my hot headed husband needed a glass of milk.
