Sylvia is one of my best friends. Sylvia and I used to be roommates for 2 years. When Sylvia and I were roommates, we baked Pumpkin Bread at least once a week during the Fall. That’s why this recipe is in honor of my bestie,  Sylvia!

If you like foods that appeal to both the salty and sweet in your life, then you’ll like these. Well, you’ll actually have to like the flavors of both cheddar and pumpkin too, becuase they are definitely prevalent in this recipe. When I started making this recipe, I had a flashback to the Savory Cheese and Chive Bread I made last winter. It made me VERY excited to have cheese, yet again, with my breakfast. Yes, if you’re asking, I do consider this muffin a breakfast item. Either way, I’m a grown adult and I can eat whatever my little heart desires for breakfast. Don’t judge me.

Besides how great these muffins taste, they were a cinch to make. No whipping out the Kitchenaid or electric mixer – just two bowls, a whisk and a spatula. I like those kinds of recipes; especially at 8pm on a random Wednesday. All you do is mix the dry ingredients in one bowl and the wet ingredients in another bowl, then combine the two together with the shredded cheddar cheese. I then proceeded to top mine with an obscene amount of cheese because, well, I like cheese. Don’t worry though – it didn’t take away from the pumpkin flavor. They came together in no time – voila!
