I signed up for the  monthly Crazy Cooking Challenge where we find the ultimate recipe in the blog world and prepare and post it for YOU to decide if this truly is the ULTIMATE. This month we were on a mission to find the ultimate Chocolate Chip Cookie recipe. When I heard this, I knew exactly what I was going to make. These stuffed cookies have been bookmarked for about a year and it was about time I made them! Picky-Palate is by far one of my favorite blogs out there. Jenny is such a talented cook and baker who features original recipes on her blog. I can spend hours looking through her recipes… and believe me, I have! I don’t think I even need to explain why these cookies are the ULTIMATE – the pictures do them justice.

Oreo Stuffed Chocolate Chip Cookies (adapted from Picky-Palette)
Ingredients:

  • 2 sticks softened butter
  • 3/4 Cup packed light brown sugar
  • 1 Cup granulated sugar
  • 2 large eggs
  • 1 Tablespoon pure vanilla
  • 3 1/2 Cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 11.5 oz bag chocolate chips
  • 1 bag Oreo Double Stuff Cookies

Directions:

1.  Preheat oven to 350 degrees F.   In a stand or electric mixer cream butter and sugars until well combined.  Add in eggs and vanilla until well combined.

2.  In a separate bowl whisk together flour, salt and baking soda.  Slowly add to wet ingredients until mixed. Stir in chocolate chips.  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo Cookie.  Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.  Place onto a parchment or silpat lined baking sheet and bake cookies 12-1 minutes or until cookies are baked to your liking.  Let cool for 5 minutes before transferring to cooling rack.

This recipe makes about 20 VERY LARGE cookies! Beware – they go fast! Obviously they are best eaten right out of the oven because they are warm and gooey. Even the cream inside the Oreo gets melted. It’s divine.  Tutti Mangia!
